Fixate Turkey Chili: a healthy comfort food

It’s raining in Southern California!!!

It’s my favorite kind of weather and I can’t help but want to make comfort food on days like today.

I’m also in the middle of 80 Day Obsession through Beachbody, which is a workout program with an eating plan and there isn’t a ton of room for traditional comfort food.

BUT! Beachbody has a cooking show called Fixate and it is the perfect resource for making easy, healthy recipes! I am going to share their recipe for Turkey Chili today!

This recipe is both easy and quick, which makes it perfect for a mom of a 13-month-old that is only entertained for about 10 seconds at a time! ha!

The recipe calls for 1 lb of turkey meat that is already cooked. I cooked my ground turkey first and then set it aside. People: if you have an ALDI near you, I would totally look into their selection of meats! They oftentimes have organic and grass-fed meats at a much lower cost than traditional grocery stores!

I find it easiest to cook when I have all the ingredients prepped before I actually turn the stove on. (I also feel like I am in my own cooking show when I do this and it makes me feel like a professional, so that’s an added bonus.)

I cut up the peppers and the onion at this point and got out all my ingredients, just to be sure I had everything.

Now, let’s cook!

Put a tsp or two of coconut oil in a large pot on the stove. When it is melted, throw in your onions and peppers and sauté until the onions are translucent, 5-6 mins.

Then take your already cooked ground turkey and add it to the pot.

I normally like to buy organic canned goods, but today I was in Target, shopping for my ingredients and it was dangerously close to my son’s nap time and Target let me down; they didn’t have organic diced tomatoes. SO, In the spirit of being authentic with you all, I figured I would tell you that I not only didn’t buy organic tomatoes, I bought the cheapest ones they had! hah! You win some, you lose some.

At this point, I rinsed the kidney beans in a colander (Is there a better way to do this? Please someone tell me!) and I added them to the meat/vegetable mixture along with the tomatoes.

Add in your red wine. I had a cabernet on hand and used that, but you can use almost any type of red wine. Then last, but not least, add in your spices.

Cook for 15-20mins and voila! You have a healthy version of Chili that you don’t have to feel guilty eating!

If you follow Beachbody Portions, this recipe is 1/2 a green, 1 red, 1 yellow and 1/2 a teaspoon.

A serving size is 1 cup and it has 8 servings per recipe.

I hope you enjoy!!
